Good morning! This is kind of a random recipe, but a couple of weeks ago, I was reading Reading My Tea Leaves blog and she made pickling them sound fun. I figured, I've never pickled anything, have recently fallen in love with pickles themselves, and have never tried radishes, so I'll give it a shot! Also, I love jars and all of their uses, so this was a good opportunity to use one of my many. Check out the recipe below!
- As many radishes as you want, sliced
- 1 1/2 cups of white vinegar
- 1/2 tsp. of salt
- 2 tbs. of honey
- Any spices you want! I used fennel and coriander.
Step one - Boil vinegar, honey, salt, and spices over medium heat until honey and salt dissolve, about 7-10 minutes.
Step two - While vinegar cools, layer in your radishes in your jar. Pour the vinegar mixture, spices and all, over your radishes and seal the jar.
Step three - Refrigerate for at least 15 minutes before using, and enjoy!
