To Make Pumpkin Seed Pesto

 

     Hi there! I've got a great pesto recipe for you today! I was looking at sides for the impending Turkey Day, and saw roasted roasted veggies drizzled with a pumpkin seed pesto. It looked too good to not try! I'm already a big fan of pesto (much to my mom's dismay, sorry mom!), so this wasn't to big of a stretch for me. Get the recipe below!

Ingredients:

- 1 cup of packed basil leaves

- 1/2 cup of pumpkin seeds or pepitas

- 2 cloves of garlic

- 1/2 cup of olive oil

- 1/2 cup of parmesan

Directions:

1. Put all ingredients into a food processor and blend until smooth. Store in a jar in the fridge and enjoy!
